Veggie Packed Protein Chili

This veggie packed protein chili is delicious and easy to make and heat up throughout the week! I’ve been trying to meal prep more to save time throughout the week & it has saved me??

Ingredients:
-can of tomato paste
– 2-4 diced tomatoes 
– 1 can of black beans
– 1 can of kidney beans
– 1 average sized yam 
– 1 cup of quinoa
– 1 zucchini 
– 1 red pepper 
– 1 -2 carrots
– 1 rep pepper 
– 1-2 celery sticks
– 1 onion
– any additional veg you desire ( I added broccoli cause I had some that was going bad.. meals like this are perfect for veggie scraps instead of throwing them out)
-garlic, chili powder, veg stock / bouillon whatever you like to season with!

Steps:
-sauté onion & garlic
-add 3-4 cups of water, tomato paste & veg stock
-chop up all the veg and add in ( cut the yam small so it cooks quicker) 
-add cup of quinoa 
-add cans of beans 
-bring to a boil & store
-cover and let it cook on a low heat for 1.5/ 2 hour
-stir and check occasionally! If you have an insta pot this might only take 20 min or so! 

Top with cilantro, avo, tortilla chips, salt & pepper to taste ?
